Add the garlic-infused oil, chicken, courgette, and sliced red and green peppers to the slow cooker. Season with salt and pepper.

In a separate bowl, whisk together the chicken broth, peanut butter, and chilli flakes until smooth. Pour over the chicken and vegetables in the slow cooker and stir to coat.

Cook on LOW for 4–5 hours or HIGH for 2–3 hours until the chicken is tender.
