This Low FODMAP Spanish Hot Pot is a one-pot wonder, combining smoky paprika, juicy chorizo-style sausage (low FODMAP friendly), and hearty vegetables in a rich tomato broth. Place the pork in a bowl and drizzle the maple syrup. Mix to coat and season with salt and pepper.

In a large casserole dish heat the garlic infused oil. Add the pork and fry quickly until browned. Remove from the pan and set aside.

Wipe the pan clean and add a tbsp more of oil, add the Chorizo and fry for 3 minutes until crisp. Add the onion and frozen peppers and fry for a couple of minutes until the peppers have softened.

Sprinkle the paprika and flour and stir in the tomato puree and saffron.

Stir in the passata and stock and bring to the boil. Season with salt and pepper. Cover with lid, reduce the heat and simmer for about 20 minutes.

Return the pork to the pan and simmer for another 5 minutes.

Stir in the chopped parsley to serve.
