Description

Why not try out these tasty Banana & Blueberry breakfast muffins? Packed full of nutritious oats these muffins are great to make as meal prep for a quick on the go breakfast or afterschool treat. 

As a bonus these muffins are dairy and sugar free!

Instructions

  1. Preheat the oven to 180 C

  2. In a medium bowl mash bananas. Add the oats, beaten egg, maple syrup, baking powder, vanilla extract and cinnamon into the mashed banana and mix together .

  3. Once the above ingredients have been combined gently mix in the blueberries to the mixture.

  4. Line a muffin tin with liners. Spoon the mixture into each muffin cup.

  5. Bake for 25-30mins

  6. Let cool for 5 mins before eating. Once cool you can also store in an airtight container or freeze in a storage bag
