In a large pot, heat 1 tbsp olive oil over medium heat. Add carrots, parsnips, leeks, beans, bell pepper, and spring onion. Sauté for 5-7 minutes until slightly softened.

Add parsley, thyme, bay leaves, and peppercorns. Pour in 2.5L water, bring to a boil, then reduce to a gentle simmer.

Let the stock simmer uncovered for 45-60 minutes, stirring occasionally. The longer it simmers, the richer the flavour.
