Description

Making your own low FODMAP vegetable stock is not only cheaper than store-bought but also free from hidden irritants like onions and garlic. This homemade broth is full of deep, savoury flavours and is perfect for soups, risottos, and sauces. It’s easy, freezer-friendly, and customizable, making it a must-have for meal prepping on a low FODMAP diet!

Instructions

  1. In a large pot, heat 1 tbsp olive oil over medium heat. Add carrots, parsnips, leeks, beans, bell pepper, and spring onion. Sauté for 5-7 minutes until slightly softened.

  2. Add parsley, thyme, bay leaves, and peppercorns. Pour in 2.5L water, bring to a boil, then reduce to a gentle simmer.
  3. Let the stock simmer uncovered for 45-60 minutes, stirring occasionally. The longer it simmers, the richer the flavour.
  4. Use a fine-mesh sieve to strain the stock into a large bowl or jug. Press down on the veggies to extract maximum flavour. Discard solids.
  5. Let it cool completely before transferring to jars, bottles, or freezer-safe containers.
