These easy Low FODMAP Beef Taco Bowls combine smoky seasoned beef and vegetables with fluffy rice, crisp lettuce, fresh tomatoes and cheese. Put everything in the middle of the table and let everyone build their own bowl, adding extras to suit their tastes.
It’s exactly the kind of dinner we love at FODMAP Family Kitchen: one meal for the whole family, without having to cook a separate Low FODMAP dinner.
Why You’ll Love This Recipe
- One meal for everyone: start with the same Low FODMAP base and let everyone customise their bowl.
- Quick enough for a weeknight: around 30 minutes from start to finish.
- Family friendly: keeping the chilli mild means everyone can enjoy it, with extra heat added at the table.
- Packed with vegetables: carrots, red pepper, spring onion greens, lettuce and tomatoes all make an appearance.
- Great for leftovers: the beef mixture works brilliantly for lunches, baked potatoes or another rice bowl.
One meal. One family. Less FODMAP stress.
Ingredients You’ll Need
For the Taco Beef
500g lean beef mince
A simple base for the taco filling that takes on all those lovely smoky spices.
1 red pepper, diced
Adds sweetness, colour and a little crunch.
2 carrots, diced
An easy way to add more vegetables and bulk out the beef mixture.
4 green spring onion tops, chopped
We use the green tops rather than the white bulb to add that familiar onion flavour while keeping the recipe Low FODMAP.
2 tbsp garlic-infused olive oil
One of my favourite ways of bringing garlic flavour into Low FODMAP cooking.
1 tsp ground cumin
Adds the warm, earthy flavour you’d expect from a taco filling.
2 tsp smoked paprika, divided
Mild chilli powder, to taste
½ tsp dried oregano
2 tbsp tomato purée
For the Bowls
250g basmati or long-grain rice
100g lettuce, shredded
150g cherry tomatoes, chopped
75g feta or suitable grated cheese
Optional Extras
- Tortilla chips
- Chilli flakes – up to 1 tsp for extra heat
- Mashed avocado – up to 60g / approximately 3 tbsp
- 1 lime, cut into wedges
Low FODMAP Swaps
Traditional taco recipes can contain onion, garlic and ready-made seasoning mixes. For this FFK version, we’re building the flavour ourselves.
Instead of onion: use the green tops of spring onions.
Instead of fresh garlic: use garlic-infused olive oil.
Instead of a packet taco seasoning: cumin, smoked paprika, oregano and chilli give us plenty of flavour while allowing us to control exactly what goes into the meal.
Check the Label
Check tortilla chips and any grated cheese or additional sauces you serve alongside the bowls for ingredients that may not suit your Low FODMAP diet.
Ready-made taco seasoning can also contain onion and garlic, which is why this recipe uses individual herbs and spices instead.
💛 The Fodmap Family Kitchen Way
This recipe really sums up what One Meal. One Family. Less FODMAP Stress. means in our kitchen.
Rather than making a Low FODMAP dinner and then something different for everyone else, start with one meal that everyone can eat.
Put all the components in the middle of the table and let everyone personalise their own bowl.
Family members who aren’t following a Low FODMAP diet can add things like their favourite salsa, beans, additional avocado or hotter sauces separately.
No second dinner required.
Family Extras
This also makes taco bowls a great relaxed dinner when you have friends round, as everyone can choose the toppings that work for them.
For family members/ friends who aren’t following Low FODMAP, put additional toppings on the table such as:
- Their favourite salsa
- Beans
- Extra avocado
- Hot sauce
- Additional chilli
- Extra tortilla chips
The main dinner stays the same — you’re simply giving everyone the freedom to finish it their way.
Substitutions & Variations
Cheese: Use feta or your preferred suitable grated cheese.
Rice: Either basmati or long-grain rice works well.
Heat: Keep the taco beef mild for the whole family and let anyone who likes things hotter add chilli flakes at the table.
Make it more substantial: Serve with tortilla chips alongside the rice and toppings.
Storage & Leftovers
Fridge
Allow leftover taco beef to cool before transferring it to an airtight container. Refrigerate and use within 2 days.
Reheating
Reheat the beef thoroughly until piping hot throughout.
If you’re storing leftover rice, cool it quickly, refrigerate promptly and follow appropriate food-safety guidance when reheating.
Love Your Leftovers ♻️
Don’t just repeat the same dinner the next day.
Leftover taco beef is brilliant:
On a baked potato with a little grated cheese.
Over rice for a quick lunch bowl.
As another taco bowl with whatever salad and toppings you have left in the fridge.
Kate’s Kitchen Tips
Dice the vegetables fairly small. They’ll soften more quickly and mix into the beef rather than feeling like separate chunks of vegetables and the kids don’t notice they are there!
Brown the mince first. Cooking the beef separately before softening the vegetables lets you drain away any excess fat without losing all those lovely vegetables at the same time.
Don’t make the whole pan too spicy. Keeping the base mild and putting chilli flakes on the table makes this much easier to serve as a family meal.
Put everything on the table. Part of the appeal of this recipe is letting everyone make their own dinner — so don’t assemble the bowls in the kitchen!
